  • 1 ½ teaspoon of Worcestershire Sauce

  • First remove all cartilage and bits of shell from the crabmeat ensuring that you do not break up the lumps of crab. Now heat some butter in a skillet and cook the onion along with ½ a teaspoon of salt. Cook it until the onion becomes soft.
  • Next take some Worcestershite sauce, eggs, salt, paprika, tartar sauce, onion mixture and pepper and whisk it all together. Then slowly and carefully fold in the torn bread and crabmeat to form six cakes that measure 3 ½ inches across and are ¾ inches thick. Place these cakes on a tray that has been lined with wax paper and sprinkled with bread crumbs.
  • Once that crab cakes have been placed on the wax paper, sprinkle the leftover breadcrumbs over the cakes. Use another sheet of wax paper to cover the crab cakes and let them chill for about an hour. Now take the remaining butter and melt it in a nonstick skillet. Wait until the foam subsides after which cook the crab cakes in them until they turn golden brown on both sides. This process of frying the crab cakes should take about 3 minutes, each side.
