Recipe Ingredients
2 slices of white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup chopped onion
1 teaspoon of kosher salt
3/4 pound of ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all purpose flour
3 cups of beef broth
1/4 cup heavy cream
Recipe Preparation
Preheat the oven to a temperature of around 200° F.
In a mixing bowl tear the bread into small pieces and add milk. Set this aside.
In the sauté pan, melt around 1 tablespoon of the butter on medium heat. To this add onion along with a pinch of the salt and stir till the onions become soft. Now remove this from the heat and set it aside.
In the bowl of a mixer put together the ground chuck, egg yolks, pork and the milk and bread mixture. Add the kosher salt, allspice, nutmeg, black pepper and onions. Beat this on medium speed for a period of 1 to 2 minutes.
Shape the mixture into balls. In a sauté pan put the remaining butter on medium heat and add the meatballs. Sauté the meatballs till they turn golden brown. Remove these meatballs and then place them in a dish and put them in the warmed oven.
For the gravy, on low heat in a pan add the flour and whisk it until it turns light brown. Now add the beef stock and whisk this till the sauce thickens. Add cream and cook till the gravy reaches the required or desired consistency. Remove the meatballs from the oven and cover them with the prepared gravy.
