Recipe Ingredients
30 ml of olive oil
¾ teaspoon of salt
1 minced onion
1 finely sliced scallion
3 minced garlic cloves
1 tablespoon of paprika
½ a teaspoon of ground ginger
1 ½ teaspoon of chili powder
1 tablespoon of soy sauce
Lemon Juice (1 lemon)
5 hard boiled peeled and chopped eggs
2 chopped tomatoes
2 teaspoons of fresh lemon thyme (or a herb of your choice)
35 grams of blanched and de-skinned dry-roasted Peanuts
1 green Chili (mined after removing seeds and ribs)
Recipe Preparation
First
heat 2 tablespoons of olive oil in a frying pan placed on medium-low
heat. Next add the peanuts and sauté until they turn golden brown in
color. Now stir in the onion, scallion, chilies and garlic and cook
this mixture until the onions become translucent. Then add the ground
ginger, paprika and chili powder and cook for an additional 2 minutes.
Remember to stir this mixture occasionally. When it is ready, transfer
the contents into a medium bowl.
Now take a separate bowl and
whisk the soy sauce, lemon juice, salt and the remaining olive oil
together. Add this mixture along with the eggs, fresh herbs and
tomatoes to the bowl that contains the peanut mixture. Mix the contents
gently and serve!
Not your typical blue cheese salad dressing, this is one that goes great on a crisp cabbage salad.
