With this recipe, try grilled chicken salad with peaches - a peachy way to satisfy appetite for grilled chicken
Recipe Ingredients
A teaspoon of pepper powder
5 tablespoons of olive oil (divided)
2 tablespoons of fresh lime juice
1 ½ teaspoons of sea salt (divided)
About 1 ½ pounds of skinless and boneless chicken
1 teaspoon of honey - Dijon Mustard
2 peeled and diced peaches
1 diced avocado
½ a cup of thinly sliced radicchio
2 minced onions
A finely chopped shallot
1 ½ teaspoon of sherry wine vinegar
2 Teaspoons of fresh thyme leaves
About 2 ½ ounces of baby greens
Recipe Preparation
First
mix 1 tablespoon of olive oil along with 1 teaspoon of salt, ½ a
teaspoon of pepper and lime juice in a glass dish measuring 11 x 7
inches. Once that is done, add the chicken and turn to coat it.
Marinate the chicken for about 30 minutes remembering to turn it
occasionally.
Next prepare the barbecue at medium to high
heat and mix the remaining oil, ½ a teaspoon of salt, ½ a teaspoon of
pepper, shallot, onions, vinegar, thyme and mustard in a bowl. Now mix
the other ingredients such as radicchio, avocado along with the others.
After that is done, toss the ingredients.
Now grill the chicken
for about 5 minutes, each side. After that transfer the grilled chicken
to the work surface and cut crosswise into slices that are thin. Then
mix the baby greens dressing in the bowl. Next take the salad and
spread it on 4 plates. Finally arrange the chicken along the salad and
serve.
