Cinnamon and Raisin Coffee Cake Recipe

Recipe Ingredients
  • 2 eggs
  • A teaspoon of salt
  • 2 ½ cups of Flour (all-purpose)
  • ¼ cup of melted butter
  • 2 teaspoons of cinnamon
  • A cup of granulated sugar (divided)
  • 1 ¼ teaspoons of baking soda
  • 5 tablespoons of white vinegar
  • 1 cup of milk
  • ½ a cup of raisins
  • ¼ cup of melted shortening
  • ½ a cup of chopped nuts
Recipe Preparation
  • To begin combine the butter, cinnamon and ½ a cup of sugar until it turns well blended and then set the mixture aside. Now take a large bowl and sift the flour, salt and baking soda in it along with the remaining cup of sugar.
  • Now take a medium bowl and beat the eggs in it. Next add the vinegar mixture and mix it well. Once that is done, blend in the shortening and raisins. Now pour this mixture into the flour and stir until it gets moistened.
  • Next spread half the batter into a greased baking pan that measures 8 inches and sprinkle half the cinnamon mixture over it. Now top the mixture with the remaining batter. Use a knife and draw it through the batter many times in order to distribute the filling. After that, sprinkle the nuts and the remainder of the cinnamon mixture over the batter. Put the batter into an oven at 350 degrees for a period of 15 minutes. Take it out of the oven when it is ready, cut it into squares and serve the cinnamon and raisin coffee cake warm.
